Cinnamon Quinoa and Apple Parfait

Topped with the homemade cinnamon granola that I made yesterday.

I told you I was obsessed with cinnamon!!


I recommend preparing all ingredients ahead of time, refrigerate, cool completely then assemble.

Cinnamon Apples

  • 4-5 apples peeled, cored and coarsely chopped – I used Granny Smith
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 tablespoons sugar
  • 1 cup water

Combine ingredients in a saucepan, bring to a boil and reduce heat to low.  Cover and cook until apples are softened.  Remove from heat and let cool completely.

Cinnamon Quinoa:  Cook 1 cup of quinoa according to package.  Cool completely then add 1 1/2 teaspoons of cinnamon.

To assemble:  Layer yogurt, quinoa and apples top with granola.  Recipe yields 4 servings

Homemade Cinnamon Granola


Cinnamon Granola

  • 4 cups rolled oats
  • 6 tablespoons honey
  • 4 tablespoons brown sugar
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 tablespoons warm water
Add ins: sliced almonds, flaked coconut, sunflower seeds. 
*I am obsessed with cinnamon so I added a lot more to mine than shown in the recipe. 

Preheat oven to 250 degrees F.  Lightly grease a big cookie sheet.  In a bowl whisk together the honey, brown sugar, cinnamon, salt, oil, and warm water.   Add the rolled oats and stir until everything is evenly coated. Spread the granola in your prepared pan.  Bake the granola for 1 hour stirring every 15 minutes. Let it cool, and store your granola in an airtight container.

I am stuck in a breakfast rut!! You know, eating the same thing for breakfast days weeks straight.  Ever happen to you? I recently purchased a new blender and a bunch of fresh and frozen fruit to make smoothies.

What are your favorite types of smoothies? 

Asian Chopped Salad

photo (30)Chopped cabbage topped with almonds and wontons.  Add some ginger dressing and you have the perfect combination!  The only thing missing was a piece of salmon or maybe shrimp.  This would also taste good in a wrap too ahh all of the options.

Do you ever go to the grocery store for one thing but end up leaving with a ton of stuff?  Yeah, seems to happen to me every time I go to the store.  After spending the weekend looking out the window at 3 feet of snow, I had a mild case of cabin fever and needed to escape.  I ended up at Wegmans not really needing anything but still managed to spend $70.

Thanks to that trip to Wegmans I’m now obsessed with Barbara’s Puffins which has been breakfast every day this week with a sliced banana on (23)Snack:  I couldn’t resist these kiwi’s!! Delicious

Lunch:  Tomato and cheddar quesadilla.  I like this because it’s quick and versatile, leftover chicken?  Throw that in too.  Enjoy with salsa, sour cream or even bbq sauce. photo (26)

Dinner:  My own creation of thai noodles, grilled tofu and veggies drizzled with thai peanut sauce! photo (28)

Coffee !

Ever order a coffee and get the exact opposite of what you asked for?  I have.  Have you ever been in a rush to get somewhere but you still stop to get a coffee and it takes 7 minutes longer than expected?  I have.  I’m sure I could go on with these scenarios but I won’t because you get the point right?  Well, I decided to take matters into my own hands and start saving time and money by making my coffee at home.  I am not very picky, well I guess I am considering I just listed all the ways I don’t like my coffee but this morning I created a perfect brew which got my Monday off to a Marvelous start!!

For dinner I had my go to oven roasted chicken with potato and green beans.  Who doesn’t love one pan dinners?  This was what it looked like right before I put it in the oven.. check back later this week for what it looked like after it roasted for 45 minutes!
