Thai Peanut Sauce & Noodles



  • 1 package Soba Noodles (I used buckwheat)
  • 1/2 Cup Shredded carrots
  • 2 Green onions, chopped
Thai Peanut Sauce
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp peanut butter
  • 1 tbsp brown sugar
  • 1 tsp sesame seeds

Cook noodles according to package.  While noodles cook, prepare Thai Peanut Sauce.  Once noodles are cooked, drain and transfer to a large bowl.  Mix in sauce and top with carrots and green onion.  Serve warm or chilled.
