Crowd Pleasers (Guacamole & Irish Nachos)

I hope you all enjoyed the weekend! I made a few appetizers for the Super Bowl and I am excited to say they were “crowd pleasers”

First up, some good ol’ Guac!

Ingredients:

  • 4 ripe medium-size avocados
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tomato

Directions:

Cut avocados in half lengthwise.  Remove pit, scoop out flesh of avocado, sprinkle on garlic powder, salt, and pepper.  Use a fork to mash avocado to desired consistency.  Top with diced tomato

Next, Irish Nachos

Ingredients:

  • 2 large russet potatoes (this was enough for 4 people)
  • Vegetable oil
  • Salt, pepper, dried parsley & cayenne
  • Any of your favorite nachos toppings

Directions:

Slice potatoes into semi-thin discs, drizzle with oil, sprinkle salt, pepper, dried parsley & cayenne on both sides.  Place potato slices on a wire cooling rack and set rack in a baking sheet.  Broil potatoes on high for about 12 minutes then carefully flip the potatoes over.  Broil for another 10-12 minutes until golden.  Remove from broiler and place potatoes in an oven safe serving dish.  Sprinkle cheese, tomatoes and any other of your favorite nacho toppings.  Bake at 350 for about 15-20 minutes.
